Indian-style chicken


• 1 cup (250 mL) Liberté Classique plain yogurt
• 1/4 cup (60 mL) olive oil
• 2 tbsp (30 mL) Madras curry powder*
• 2 tbsp (30 mL) lemon juice
• 1 tbsp (15 mL) honey
• 4 tsp (20 mL) ginger, finely chopped
• 12 skinless chicken drumsticks
•1¼ tsp (6 mL) salt
• freshly ground pepper


1. In a large bowl or airtight container, mix the Liberté Classique plain yogurt, olive oil, curry powder, lemon juice, honey and ginger.

2. Using a knife, cut two slits in the plump part of each chicken drumstick. Sprinkle the salt evenly on the meat. Add pepper.

3. Place the drumsticks in the yogurt marinade, coating them evenly. Cover and store in the refrigerator for at least 8 hours or preferably overnight.

4. Preheat oven to 220°C (425°F).

5. Line a baking sheet with parchment paper. Remove a bit of marinade from the drumsticks and place them on the baking sheet. Discard the rest of the marinade. Bake in the centre of the oven for 35 to 40 minutes or until the drumsticks are nice and golden.

Yogurt sauce


• 1 Lebanese cucumber, grated
• 1 cup (250 mL) Liberté Classique plain yogurt
• 1/4 cup (60 mL) fresh cilantro, chopped, to taste
• 1/2 tsp (2 ml) salt (and a bit more to bleed the cucumber)
• freshly ground pepper


6. Place the grated cucumber in a small bowl and salt generously. Let stand for 5 minutes. Press the cucumber using a clean cloth to remove the excess water and place it in a bowl.

7. Add the Liberté Classique plain yogurt, cilantro, salt and pepper and mix well. Taste and adjust the seasoning as needed.

8. Serve the chicken drumsticks topped with the yogurt sauce. As a side dish, serve brown or basmati rice, rice pilaf with pistachios and almonds (recipe in French) or naan and a cucumber or green salad (arugula or watercress).

*Garam masala version
For an alternative version that is just as fragrant, omit the honey in the yogurt marinade and substitute the Madras curry powder with the same quantity of garam masala.
