When it’s The Glenlivet you’re pouring, single malt whisky is made for more than just sipping and savouring. For this series, we tapped Rose Simard, ELLE’s Montreal-based resident mixologist, to create three exclusive single malt cocktails using The Glenlivet’s multi-faceted collection of spirits. Follow her ingenious (and easy-to-follow) recipes, and then drink up the good times.

Picture this: The sun is shining, there’s a sumptuous Sunday-brunch spread of pastries before you and you have a cocktail in hand that’s just a liiiiittle more spirituous than your average mimosa. That’s The Glenlivet Royale: an effervescent, honey-infused bevvy that’s amped up with the balanced tropical flavour of The Glenlivet 12 Year Old. Toast with one come noon for a celebratory get-together that spills into the afternoon.

The Glenlivet Royale

1 oz The Glenlivet 12 Year Old
0.5 oz honey syrup (1 part honey to ½ part water)
0.5 oz fresh lemon juice
2 oz champagne

1. Pour all the ingredients except the champagne into a cocktail shaker.
2. Add ice cubes and shake vigorously.
3. Double-strain into a chilled coupette or flute using a fine strainer.
4. Top up with champagne and garnish with a lemon twist.
