Aman’s Delicious AF Banana Bread Recipe

Makes 2 loaves

Ingredients

 use organic, local Canadian ingredients where possible  

–5 over-ripe bananas (mashed)

–1 1/4 cup organic cane sugar

–3/4 cup unsalted butter (room-temperature)

–3 organic or free-range eggs (whisked)

–1 tbs. vanilla extract (not essence)

–2 1/2 cups all-purpose flour (unbleached)

–1 1/4 tsp. baking powder (aluminum-free)

–1 tsp. baking soda

–1/2 cup milk (or sub for dairy-free alternative)

–1 1/2 tsp. The Paisley Notebook’s Chai/Baking Spices

–1/2 cup semi-sweet chocolate chips (fair-trade)

Step-by-step

–Pre-heat your oven at 350 f.

–Scale all ingredients.

Tip: if your butter is hard, grate it like cheese to magically take it to room-temperature. 

–Using a stand-mixer, cream together the butter and sugar until pale and, well, creamy — from time-to-time, scrape the bottom of the bowl.

–Now add in the vanilla extract and drizzle in the eggs, mixing again.

–Add the dry ingredients and let those slowly come together.

–Add in the mashed bananas.

–Fold-in chocolate chips.

–Empty the mix into 2 greased loaf tins (give it a tap on its bottom to even out). Tip: a rubber spatula helps us waste nothing (and cake mix is delicious).

–Bake for approximately 40-55 minutes (or until a toothpick comes out clean).

–Remove from the loaf pan and leave to cool on a wire rack (note: I didn’t have access to one).
