How to make a fancy but simple take on a Tom Collins

Picture this: it’s Monday night and you’re hosting the girls for a Bachelorette viewing party. Sure, you could pull out the rosé, but Chris Harrison and the gang deserve more than that, right? Enter your new fave drink: the honey-thyme Tom Collins. Marlene Thorne of Toronto bar Famous Last Words shows us this twist the classic drink that will make you the most popular person in your friend group.
All you need is gin, lemon juice, thyme, soda water and a simple syrup that that takes minutes to make. Peep the video and the full recipe follows below.
In a Collins glass, mix together:
1½ oz. gin
1 oz. fresh lemon juice
¾ oz. honey-thyme simple syrup (To make honey-thyme simple syrup, stir together a cup of honey and a cup of boiling water; add in a handful of fresh thyme; let it steep for 10 minutes; strain and cool.)
Fill with ice until the glass is about three-quarters full. Stir.
Top off with soda water. Garnish with a sprig of fresh thyme.
