How to make the best mulled wine ever

Because winter is here and you need something to do until Game of Thrones returns next spring, why not throw a convivial gathering fit for the halls of the Lannisters themselves? The centrepiece of your revel (bloodshed-free, of course) should be a steaming carafe of Glühwein. This version of the traditional German holiday drink was created last winter by Nick Kennedy at Toronto’s Civil Liberties for all the cold people who streamed into the bar. He promises a depth of spicy flavour redolent of a “chalet in the French Alps.” His hot tip for this bone-warming brew? “Adapt it to suit your taste: Add more orange zest or less cinnamon—extra brandy is always fun!” #allmenmustwine

GLUHWEIN RECIPE

3 medium oranges
1 cup (250 mL) sugar
10 whole cloves
2 (3-in., or 7.5-cm) cinnamon sticks
3/4 cup (180 mL) water
2 bottles dry red wine
1/4 cup (60 mL) brandy
1/2 cup (120 mL) Cynar
3/4 cup (180 mL) Fernet-Branca
Cheesecloth or fine strainer

Zest and juice oranges. Combine zest, juice, sugar and spices with water and bring to a boil. Reduce by half. Add wine, brandy and liqueurs; simmer on low for five minutes. Strain and serve warm.
